Sweet Pork
2 pounds pork
3 cans Coke (NOT diet)
1/4 c. brown sugardash garlic salt
1/4 c. water1 can sliced green chilies
3/4 can RED enchilada sauce (I used Old El Paso brand, medium spiciness)
1 c. brown sugar
Put the pork in a heavy duty Ziploc bag to marinade. Add about a can and a half of coke and about 1/4 c. of brown sugar. Marinade for a few hours or overnight. Drain marinade and put pork, 1/2 can of coke, water, and garlic salt in crock pot on high for about 3-4 hours (or until it shreds easily, but don't let it get TOO dry). Remove pork from crock pot and drain any liquid left in the pot. Shred pork. In a food processor or blender, blend 1/2 can Coke, chilies, enchilada sauce and remaining brown sugar (about a cup, you can add a little more or less to taste..). If it looks too thick, add more Coke little by little. Put shredded pork and sauce in crock pot and cook on low for 2 hours. (I used more Coke than the recipe calls for and I didn't let it marinade and it still tasted good)

Cafe Rio Pork
4 lb. pork roast
1 cup mild salsa
1 cup brown sugar
1 cup 7-up or coke (no fake stuff)
Cook in crock pot 8 hours with all ingredients and then shred. (We found that you might need to add more brown sugar)
Cafe Rio Creamy Dressing
1 large jalepeno
1 clove garlic
1 tomatillo
1 handful cilantro leaves
1 lime (juice and rind) or 1/4 cup lime juice ( I didn't like the rind zested-it was too limey)
1 cup milk
1 cup mayonnaise
1 pkg Hidden Velley Ranch dressing mix
Put everything except mayo in blender. Blend until all green is very tiny. Whisk in mayo and chill.
Cafe Rio Rice
3 cups water
4 tsp. chicken bouillon
4 tsp. garlic-minced
1/2 bunch cilantro
1 can green chiles
3/4 txp. salt
1 Tbsp. butter
1/2 onion
3 cups rice (minute rice works best)
Blend cilantro, green chiles, and onion in food processor. Bring water to a boil and add all ingredients, simmer covered 30 min.
You will also need lettuce, beans (black or pinto) and tortilla strips or chips. You can also make the salad on top of a tortilla shell if you would like! Enjoy!!
